The original recipes are translated by the author from Harleian MS. 279, Harleian MS. 4016, and Extracts of Ashmole MS. 1439, Laud MS. 553, and Douce MS. 55. They are reprinted by permission of the Council of the Early English Text Society. Take a Thousand Eggs or More features over 400 15th century recipes.
